Cappuccino Chia Seed Breakfast Pudding

Start your day with your morning cup of coffee, instead turned into this cappuccino-inspired chia pudding!

Ingredients
  

  • 9 tbsp chia seeds
  • cup oat milk
  • 7 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 2 tsp instant coffee powder
  • 1-2 pinches pink salt
  • vegan whipped cream optional topping

Instructions
 

  • Add together all the ingredients in a small bowl or glass cup. Give it a good stir.
  • Taste the pudding and add a few extra pinches of coffee powder, if desired for a stronger coffee taste.
  • Once all the ingredients are fully incorporated, place in the refrigerator for at least 20 minutes.
  • If making more than one serving, separate the mixture into individual serving jars. Keep these refrigerated until ready to eat.
  • Top the pudding with optional vegan whipped cream right before eating, if desired. Enjoy cold!
