Cappuccino Chia Seed Breakfast Pudding
Start your day with your morning cup of coffee, instead turned into this cappuccino-inspired chia pudding!

Ingredients

chia seeds
1¾
cup
oat milk
7
tbsp
pure maple syrup
1
tsp
vanilla extract
2
tsp
instant coffee powder
1-2
pinches
pink salt
vegan whipped cream
optional topping
Instructions
Add together all the ingredients in a small bowl or glass cup. Give it a good stir.
Taste the pudding and add a few extra pinches of coffee powder, if desired for a stronger coffee taste.
Once all the ingredients are fully incorporated, place in the refrigerator for at least 20 minutes.
If making more than one serving, separate the mixture into individual serving jars. Keep these refrigerated until ready to eat.
Top the pudding with optional vegan whipped cream right before eating, if desired. Enjoy cold!
