In a small bowl, mix together the warm water and chia meal. Set aside for 15 minutes.
In another bowl, beat together the butter, sugar and vanilla with a whisk.
After 15 minutes, beat in the egg.
In a third bowl, sieve the flour, baking powder and salt.
Slowly pour this into the wet mixture, making sure not to overmix.
Lastly, stir in the sprinkles.
Line a baking tray with parchment paper.
Use a cookie scoop to make 8 cookies, evenly separated on the tray.
Place these in the freezer for at least 2 hours.
About 15 minutes before removing the tray from the freezer, turn the oven on to 350 degrees F.
Once the cookies have been chilled at least two hours, transfer the tray into the hot oven at 350.
Bake for about 11 minutes. Do not over bake - the cookies will bake more as they cool down, making them chewy rather than too crunchy.
