- ¾ cup boiled quinoa

- 2 tbsp cilantro finely chopped
- ⅓ cup multi-colored bell pepers diced
- ⅓ cup cucumbers diced
For the Sauce
- 1 tbsp creamy peanut butter
- ¾ tsp pure maple syrup
- 2 tsp tamari
- ½ tsp rice wine vinegar
- ¼ tsp sesame oil
- ¼ tsp fresh lime juice
- ½ tsp fresh ginger finely grated
- ¾ tsp fresh garlic finely grated
- pinch red pepper flakes optional
Whisk together all sauce ingredients in a small bowl.
