Ingredients
  

For the Salad

  • ½ + ⅓ cup Chickpeas
  • ¾ cup boiled quinoa
  • 2 tbsp red onion diced
  • 2 tbsp cilantro finely chopped
  • cup multi-colored bell pepers diced
  • cup cucumbers diced

For the Sauce

  • 1 tbsp creamy peanut butter
  • ¾ tsp pure maple syrup
  • 2 tsp tamari
  • ½ tsp rice wine vinegar
  • ¼ tsp sesame oil
  • ¼ tsp fresh lime juice
  • ½ tsp fresh ginger finely grated
  • ¾ tsp fresh garlic finely grated
  • pinch red pepper flakes optional

Instructions
 

  • Whisk together all sauce ingredients in a small bowl.
  • In a medium bowl, toss together the salad ingredients.
  • Pour the sauce on top, tossing the salad to ensure even coating of the sauce.
