Equipment

  • Small Saucepan

Ingredients
  

  • cup oat milk
  • 2 tbsp + 2 tsp dry quick-cooking oats
  • ¼ cup pumpkin purée
  • tsp ground nutmeg
  • tsp ground ginger
  • ½ tsp ground cinnamon
  • 1 tsp pure maple syrup
  • ¼ tsp vanilla extract
  • pinch pink salt
  • vegan chocolate chips optional topping
  • pecans optional topping

Instructions
 

  • Mix together all ingredients, except the optional toppings, in a small saucepan over medium heat on the stove top.
  • Stir every so often, allowing the oatmeal to cook. This will take a few minutes. Add additional sugar as desired.
  • Once the oatmeal is cooked, turn off the heat.
  • Pour the oatmeal into a mason jar or a bowl. Top with optional toppings. Additionally, add in cold milk over the oatmeal before serving, if desired. (Personally, this makes it taste so much better). Enjoy!

Notes

  • Storage
    • Store in an airtight container in the refrigerator for up to two days. Heat up before serving.
