- ⅓ cup oat milk
- 2 tbsp + 2 tsp dry quick-cooking oats
- ¼ cup pumpkin purée
- ⅛ tsp ground nutmeg
- ⅛ tsp ground ginger
- ½ tsp ground cinnamon
- 1 tsp pure maple syrup
- ¼ tsp vanilla extract
- pinch pink salt
- vegan chocolate chips optional topping
- pecans optional topping
Mix together all ingredients, except the optional toppings, in a small saucepan over medium heat on the stove top.
Stir every so often, allowing the oatmeal to cook. This will take a few minutes. Add additional sugar as desired.
Once the oatmeal is cooked, turn off the heat.
Pour the oatmeal into a mason jar or a bowl. Top with optional toppings. Additionally, add in cold milk over the oatmeal before serving, if desired. (Personally, this makes it taste so much better). Enjoy!
