Peel and cut each banana in half. Stick a toothpick into each end, to make 4 banana "popsicles."
Place the wax paper on a freezer-safe plate and set aside.
If the peanut butter is too firm, leave the jar in a bowl of hot water for some time to heat it up.
Once the peanut butter is softened enough, dip the banana popsicles in the jar until fully coated. If there's too much, let the excess drip off.
Place the bananas on the wax paper, then set in the freezer.
Bring water to a boil in a stovetop pot.
Once boiling, remove the water from the heat. Place a bowl with the chocolate chips and coconut oil over top of the pot.
Stir to let the chocolate melt fully.
Remove the popsicles from the freezer, then using a butter knife or spoon, pour the melted chocolate over the bananas. You can drizzle it back and forth, so that the bananas are fully coated.
Sprinkle the roasted peanuts on top.
Place back in the freezer for at least 2 hours, or until firm. Then enjoy!
