This Fruity Vegan Yogurt Recipe uses summer fruits in between yogurt layers for a quick and healthy snack or breakfast.

  • High-speed blender or food processor

Ingredients
  

For the Mango Layer

  • ½ cup vegan yogurt
  • ½ cup frozen mango
  • sweetener, if desired
  • ¼ tsp vanilla extract

For the Berry Layer

  • ½ cup vegan yogurt
  • ¼ cup frozen blueberries
  • ¼ cup frozen cherries

For the Fruit Layers

  • ¼ cup fresh blueberries
  • ¼ cup fresh mangoes

Instructions
 

  • For the berry yogurt layer, blend together all ingredients until smooth. Pour into a large glass jar or into small mason jars for smaller servings.
  • Top with half the fruit.
  • Now blend all ingredients for the mango layer. Pour over top of the fruit.
  • Top with the remaining fruit, as shown in the picture.
  • Eat right away, or refrigerate to keep it cold!
