Healthy Vegan Coconut Bounty Candy Bars Recipe

Equipment

  • Stovetop Pot
  • Heatproof bowl
  • Spatula
  • Toothpicks

Ingredients
  

For the Filling

  • ½ cup shredded short-grain coconut unsweetened
  • 1⅓ tbsp pure maple syrup
  • tsp vanilla extract
  • pinch pink salt
  • 1 tbsp refined coconut oil

For the Coating

  • ¼ cup vegan semisweet chocolate chips

Instructions
 

For the Filling

  • In a large bowl, mix together all ingredients for the filling.
  • Refrigerate the mixture for 2 hours to firm up.
  • Prepare a baking sheet lined with parchment or wax paper.
  • Once the mixture is firm, shape it into 4 oval shapes, similar to how a mini bounty candy bar looks like. Place these bars on the parchment paper.

For the Chocolate Coating

  • Bring a pot of water to boil on the stovetop.
  • Once boiling, remove from the stove. Place a heatproof bowl that is larger than the pot, over top of it.
  • Add the chocolate into this bowl and keep stirring it with a spatula, until fully melted.

For Forming the Bars

  • With a toothpick on either end of the candy bars, dip them carefully into the chocolate mixture to fully coat.
  • Place each bar back onto the parchment paper.
  • Let it chill in the refrigerator for 30 minutes.
  • After this time, remove from the fridge and eat it chilled, or let it come to room temperature first. Enjoy!
