Healthy Vegan Coconut Bounty Candy Bars Recipe

For the Filling
- ½ cup shredded short-grain coconut unsweetened
- 1⅓ tbsp pure maple syrup
- ⅛ tsp vanilla extract
- pinch pink salt
- 1 tbsp refined coconut oil
For the Coating
- ¼ cup vegan semisweet chocolate chips
For the Filling
In a large bowl, mix together all ingredients for the filling.
Refrigerate the mixture for 2 hours to firm up.
Prepare a baking sheet lined with parchment or wax paper.
Once the mixture is firm, shape it into 4 oval shapes, similar to how a mini bounty candy bar looks like. Place these bars on the parchment paper.
For the Chocolate Coating
Bring a pot of water to boil on the stovetop.
Once boiling, remove from the stove. Place a heatproof bowl that is larger than the pot, over top of it.
Add the chocolate into this bowl and keep stirring it with a spatula, until fully melted.
For Forming the Bars
With a toothpick on either end of the candy bars, dip them carefully into the chocolate mixture to fully coat.
Place each bar back onto the parchment paper.
Let it chill in the refrigerator for 30 minutes.
After this time, remove from the fridge and eat it chilled, or let it come to room temperature first. Enjoy!
