Homemade Brownie Brittle Recipe (Gluten-Free, Vegan)

Ingredients
  

  • 1 tbsp chia meal
  • 3 tbsp lukewarm water
  • 7 tbsp oat flour // make at home: grind quick-cooking or rolled oats in a spice grinder until it forms a flour
  • ¼ cup xylitol
  • tsp baking powder
  • 11 tsp cacao powder
  • pinch pink salt
  • 3 tbsp refined coconut oil melted
  • ¼ tsp vanilla extract
  • 2 tbsp vegan dark chocolate chips

Instructions
 

  • Preheat oven to 325 degrees F.
  • In a small bowl, stir together the chia meal and water. Let it sit for 15 minutes to form a chia "egg."
  • In another bowl, mix together the oat flour, xylitol, baking powder, cacao powder and pink salt.
  • Once the chia egg is done, whisk in the coconut oil and vanilla extract.
  • Make a well in the dry ingredients and mix the wet ingredients in.
  • Line the baking tray with parchment paper. Evenly pour the brownie mixture in, and top it with chocolate chips. It should be a thin batter and cover the entire pan.
  • Bake for 20 minutes, turning the tray around halfway through.
  • After baking, remove from the oven. Let it cool for a half hour, as the brownie brittle will get that "brittle" texture after it fully cools.
  • Once it's fully cooled, crack the brittle using a knife into 4 servings. Enjoy!

Notes

  • Storage
    • Store in an airtight container at room temperature for 4 days. If you notice it softening, you can pop it back in the oven at 325 degrees F for a few minutes, then let it cool, to restore its crunch.
