Preheat oven to 325 degrees F.
In a small bowl, stir together the chia meal and water. Let it sit for 15 minutes to form a chia "egg."
In another bowl, mix together the oat flour, xylitol, baking powder, cacao powder and pink salt.
Once the chia egg is done, whisk in the coconut oil and vanilla extract.
Make a well in the dry ingredients and mix the wet ingredients in.
Line the baking tray with parchment paper. Evenly pour the brownie mixture in, and top it with chocolate chips. It should be a thin batter and cover the entire pan.
Bake for 20 minutes, turning the tray around halfway through.
After baking, remove from the oven. Let it cool for a half hour, as the brownie brittle will get that "brittle" texture after it fully cools.
Once it's fully cooled, crack the brittle using a knife into 4 servings. Enjoy!
