- 1 tsp cacao powder
- ⅓ cup soft Medjool dates pitted
- ¼ cup almond flour
- ¼ cup desiccated coconut
- ¼ tsp vanilla extract
- Pinch salt
- 5 frozen raspberries
- ¼ cup desiccated coconut for rolling
Blend together all ingredients except the extra coconut for rolling, and the raspberries.
When the coconut mixture comes together, turn off the blender and shape it into 5 cookies.
Add a raspberry to the middle of each cookie shape, and wrap it up into a ball, so the raspberry is the middle filling.
Roll in the extra coconut.
