This No Bake Lamington Coconut Balls Recipe is like a raw Lamington, an Australian sponge cake coated in chocolate and rolled in coconut!

  • High-speed blender or food processor

Ingredients
  

  • 1 tsp cacao powder
  • cup soft Medjool dates pitted
  • ¼ cup almond flour
  • ¼ cup desiccated coconut
  • ¼ tsp vanilla extract
  • Pinch salt
  • 5 frozen raspberries
  • ¼ cup desiccated coconut for rolling

Instructions
 

  • Blend together all ingredients except the extra coconut for rolling, and the raspberries.
  • When the coconut mixture comes together, turn off the blender and shape it into 5 cookies.
  • Add a raspberry to the middle of each cookie shape, and wrap it up into a ball, so the raspberry is the middle filling.
  • Roll in the extra coconut.
  • Enjoy!
