- ½ cup Medjool dates pitted
- ⅔ cup almond flour
- 1 tbsp cashew butter
- 1 medium fresh lemon zested
- ⅛ tsp vanilla extract
- pinch pink salt
- 2 tsp black poppyseeds
Add all ingredients to the bowl of a food processor. Blend until a dough forms, without any date or nut chunks.
Mix the poppyseeds in by hand.
Shape the dough into 6 balls.
Transfer to an airtight container. Enjoy as a snack with your favorite latte!
