Ingredients

extra-virgin olive oil

white onion
finely diced

cooked black beans

fresh corn kernels

red bell pepper

smoked paprika

regular paprika

garlic powder

ground black pepper

red chili powder
fresh lemon juice
for serving
fresh cilantro
chopped
Instructions
In a heated skillet over medium-high heat, add the oil.
Add in the white onion. Stir for a few minutes, until translucent.
Add in the beans, corn and red bell pepper. Stir to combine, then stir in the spices until fully incorporated.
Stir the mixture around for another 3-4 minutes.
Remove the skillet from the heat and add the black bean mixture into a large bowl.
Drizzle with lemon juice and chopped cilantro before serving. Enjoy!
