No Bake Chai Spice Energy Balls (Vegan & Gluten Free)

These vegan and gluten-free No Bake Chai Spice Energy Balls capture all the warm flavors of a chai tea latte, rolled up in one bite!

Equipment

  • High-speed blender or food processor
  • Spice Grinder

Ingredients
  

  • ½ cup raw cashews not salted/roasted
  • cup Medjool dates pitted
  • 12 small green cardamom pods
  • tsp ground cinnamon
  • ¾ tsp ground ginger
  • pinch pink salt
  • 2 tbsp coconut sugar

Instructions
 

  • Add all the 12 cardamom pods into a spice grinder. Grind them up until it's a fine powder.
  • Add this powder, along with the other ingredients for the bites (except the optional coconut sugar) into the bowl of a food processor.
  • Blend until a sticky dough forms. There should not be date or nut chunks left.
  • Shape the dough into 8 even balls. (You may want to slightly oil your hands with a neutral oil, like avocado oil, before doing this. This helps to avoid the dough sticking all over your hands).
  • Place the coconut sugar in a small bowl. Roll each ball in the sugar, then transfer it to a container.
  • Store at room temperature in an airtight container until ready to eat. Enjoy!
