Ingredients
  

  • cups + 6 tbsp (225g) almond flour
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • 2 cups (400g) soft Medjool dates pitted
  • 2 tsp light molasses
  • ¼ tsp vanilla extract
  • pinch pink salt

Instructions
 

  • Blend together all ingredients until a dough forms and no date chunks remain.
  • Shape into 12 cookies.
  • Enjoy at room temperature or allow them to harden in the refrigerator (and become chewier).
