Roasted Pears with Yogurt & Crisp Granola Crumble

Ingredients
  

For the Caramelized Pears

  • 1 firm, medium pear cut into two halves
  • 1 tsp coconut sugar
  • ½ tsp refined coconut oil
  • 4 tbsp vegan yogurt split into two

For the Granola

  • 2 tbsp pure maple syrup
  • 2 tbsp refined coconut oil
  • ½ cup quick-cooking oats
  • ½ tsp vanilla extract
  • tsp pink salt
  • ¼ tsp ground cinnamon
  • tsp ground nutmeg
  • tsp ground ginger
  • tsp ground cloves

Instructions
 

  • Preheat oven to 325 degrees F.

For the Granola

  • If the 2 tbsp coconut oil are not melted, place them in a heatproof bowl in the microwave for 20 seconds at a time to melt
  • In a medium-sized bowl, add in the melted coconut oil, along with the maple syrup, vanilla and salt. Stir to combine, then stir in the oats.
  • Line a baking tray with a sheet of parchment paper. Spread the granola out evenly on it.
  • Bake for 15-16 minutes, until the oats are golden brown. Once baked, turn off the oven and remove the granola. Allow it to cool for 20 minutes on a heatproof surface. It will harden as it cools.
  • Once it's cooled, set it aside to use in the pears.

For the Pears

  • In a small stovetop pan over medium heat, add the coconut oil and coconut sugar.
  • Once it is hot, add the pears, each half face down. Allow them to roast in the oil for about 5-7 minutes on each side, flipping over to ensure both sides are roasted.
  • Turn off the heat and place each pear in a plate. Top each pear with 2 tbsp of yogurt and half of the granola that was made. Enjoy it fresh!

Notes

  • Storage
    • Store the granola in an airtight container at room temperature for up to two weeks.
    • Do not store the roasted pears, as those are best made and eaten fresh.
