In a skillet over medium heat, add in the olive oil.
Once hot, add in the garlic. Stir it around for a minute, to lightly brown the garlic.
Add in the corn kernels. Sprinkle over the garam masala, paprika, red chili powder, cumin powder and salt. Stir this around for a minute.
Lastly, add in the coconut milk and turn the heat to high.
Continue to stir, allowing the coconut milk to thicken. This will take a couple minutes.
Once the coconut milk has thickened and achieved the desired "creamed corn" consistency, turn off the heat.
Serve as a side dish, garnished with green onions or herbs as desired. Enjoy!
