Ingredients
  

  • 3 tbsp roasted, salted pistachios de-shelled before measuring
  • ¼ cup dried cherries
  • cup soft, pitted dates
  • ½ cup blanched almond flour
  • 1 tbsp cacao nibs
  • ¼ cup dried apricots
  • ¼ tsp vanilla extract
  • pink salt to taste
  • extra pistachios for topping

Instructions
 

  • Blend all ingredients together in the bowl of a food processor or a blender until a dough forms.
  • Shape into 9 bite-sized balls.
  • Top each ball with a pistachio. Enjoy!
