These Sugar Free Vegan Breakfast Parfaits are made of a sweet berry compote with vegan orange creamsicle-like yogurt!

For the Orange Yogurt
- ½ cup vegan yogurt
- 2 tbsp chia seeds
- 1 medium orange peeled, seeds removed if there are any
- ¼ tsp vanilla extract
- 1-2 tbsp pure maple syrup
For the Blueberry Compote
- ½ cup frozen wild blueberries
- 1 tsp lemon juice
- 2 tbsp water
- ¼ tsp vanilla extract
- 1 tbsp coconut sugar
For Assembly
Add half of the orange mixture into the bottom of a cup, followed by half of the compote, then repeat to make a layered parfait.
Eat it right away, or refrigerate to enjoy it cold! Personally, I loved eating the warm compote with the cold yogurt.
