Ingredients
  

For the Orange Yogurt

  • ½ cup vegan yogurt
  • 2 tbsp chia seeds
  • 1 medium orange peeled, seeds removed if there are any
  • ¼ tsp vanilla extract
  • 1-2 tbsp pure maple syrup

For the Blueberry Compote

  • ½ cup frozen wild blueberries
  • 1 tsp lemon juice
  • 2 tbsp water
  • ¼ tsp vanilla extract
  • 1 tbsp coconut sugar

Instructions
 

For the Compote

  • Cook together all compote ingredients on the stove for a few minutes over medium-low heat until thickened. Set aside when it has thickened to the consistency of a jam.

For the Yogurt

  • Blend together all yogurt ingredients until a creamy mixture has formed.

For Assembly

  • Add half of the orange mixture into the bottom of a cup, followed by half of the compote, then repeat to make a layered parfait.
  • Eat it right away, or refrigerate to enjoy it cold! Personally, I loved eating the warm compote with the cold yogurt.
