These Vegan Peanut Butter Oatmeal Chocolate Chip Energy Balls are the perfect afternoon pick-me-up snack, full of healthy fats and whole grain!

- 2 tbsp pure maple syrup
- 2 tbsp Medjool dates pitted
- ¾ cup rolled oats
- ¼ cup creamy peanut butter
- 1 tbsp black chia seeds
- 2 tbsp brown flaxseeds
- ⅛ tsp vanilla extract
- pinch pink salt
- 2 tbsp mini vegan semisweet chocolate chips
Blend together all ingredients, except the chocolate chips, in a blender or food processor until a dough forms.
Stir in the chocolate chips by hand.
Shape the dough into 9 balls.
Place them in a container, separated with layers of parchment paper in between to store. Enjoy!
