These Vegan Peanut Butter Oatmeal Chocolate Chip Energy Balls are the perfect afternoon pick-me-up snack, full of healthy fats and whole grain!

Equipment

  • High-speed blender or food processor

Ingredients
  

  • 2 tbsp pure maple syrup
  • 2 tbsp Medjool dates pitted
  • ¾ cup rolled oats
  • ¼ cup creamy peanut butter
  • 1 tbsp black chia seeds
  • 2 tbsp brown flaxseeds
  • tsp vanilla extract
  • pinch pink salt
  • 2 tbsp mini vegan semisweet chocolate chips

Instructions
 

  • Blend together all ingredients, except the chocolate chips, in a blender or food processor until a dough forms.
  • Stir in the chocolate chips by hand.
  • Shape the dough into 9 balls.
  • Place them in a container, separated with layers of parchment paper in between to store. Enjoy!

    • Store in an airtight container at room temperature for up to two weeks.
