Vegan Rainbow Cookies
These Vegan Rainbow Cookies are super easy to make, using a basic Sugar Cookie mix with only three extra ingredients!

- 1 pack (496g) Betty Crocker sugar cookie mix
- 1 salted vegan butter stick (½ cup) // at room temperature
- 1 tbsp flaxmeal
- 3 tbsp room temperature water
- vegan sprinkles as many as you want!
In a small bowl, mix the flaxmeal with the water. Let it sit for 15 minutes in the refrigerator to thicken before using in the recipe. This makes the "flax egg."
Once the flax egg is ready, the next step is to mix all ingredients in a large mixing bowl. Use an electric mixer, stand mixer or a whisk.
Grease or line a baking pan with parchment paper or a cookie sheet.
Once a cookie dough is formed, shape 16 cookies, placed evenly apart on the tray.
Follow the oven temperature and bake time on the back of your cookie bag. If using Betty Crocker mix, then bake for 8-10 minutes at 350 degrees F.
Let the cookies fully cool on a wire rack or on the baking tray before storing in a container.
