Vegan Rainbow Cookies

These Vegan Rainbow Cookies are super easy to make, using a basic Sugar Cookie mix with only three extra ingredients!

Ingredients
  

  • 1 pack (496g) Betty Crocker sugar cookie mix
  • 1 salted vegan butter stick (½ cup) // at room temperature
  • 1 tbsp flaxmeal
  • 3 tbsp room temperature water
  • vegan sprinkles as many as you want!

Instructions
 

  • In a small bowl, mix the flaxmeal with the water. Let it sit for 15 minutes in the refrigerator to thicken before using in the recipe. This makes the "flax egg."
  • Once the flax egg is ready, the next step is to mix all ingredients in a large mixing bowl. Use an electric mixer, stand mixer or a whisk.
  • Grease or line a baking pan with parchment paper or a cookie sheet.
  • Once a cookie dough is formed, shape 16 cookies, placed evenly apart on the tray.
  • Follow the oven temperature and bake time on the back of your cookie bag. If using Betty Crocker mix, then bake for 8-10 minutes at 350 degrees F.
  • Let the cookies fully cool on a wire rack or on the baking tray before storing in a container.
