Equipment

  • Regular-Size Cupcake Tray
  • Cupcake Liners
  • Oven

Ingredients
  

  • ½ cup sweet potato peeled and boiled
  • cup pure maple syrup
  • 6 tbsp almond butter
  • ½ tsp vanilla extract
  • ¼ cup cocoa powder
  • ½ tsp baking powder
  • tsp pink salt
  • cup oat flour make your own by adding rolled or quick-cooking oats to a spice grinder
  • ¼ cup vegan semisweet chocolate chips

Instructions
 

  • Preheat the oven to 375 degrees F.
  • Add all ingredients, except the chocolate chips, to a blender until smooth.
  • Fold in the chocolate chips by hand.
  • Line a cupcake tray with 6 cupcake liners.
  • Evenly pour the brownie mixture into each.
  • Bake for 25 minutes.
  • Remove from the oven and let rest on a heatproof surface for at least 15 minutes. Then enjoy!

    • Store in an airtight container in the refrigerator for up to five days, or at room temperature for up to two days.
