  • 1 block extra-firm tofu cut into 1/2-inch thick cubes
  • 1 tbsp avocado oil
  • 1 cup vegan marinara sauce
  • fresh basil optional
  • pink salt as needed

Instructions
 

  • In a skillet over medium heat, add the oil.
  • Once hot, add in the tofu cubes. Let them cook for about 4 minutes per side, flipping them over to cook both sides.
  • Once crispy, evenly pour over the marinara sauce. Let it cook for 1-2 minutes. Stir continuously to avoid the sauce sticking to the pan.
  • After 2 minutes, the sauce should be heated through.
  • Remove from the heat. Transfer the tofu to two bowls. Serve with your choice of grain, sprinkle with optional salt (if the pasta sauce is not salted enough) topped with optional basil.

  • Storage
    • Store in an airtight container in the refrigerator for up to two days. Reheat on the stovetop. It won’t stay as crispy after reheating, so you can cook it on each side with a splash of oil for 1-2 minutes.
