3 Ingredient Key Lime Pie Bites
Today we are making a 3 Ingredient Key Lime Pie Bites recipe! What is a Key Lime Pie? I get that there is some sort of lime flavor in a pie, but what does it consist of? Where did it come from? Before we get into the origins, let’s go through the anatomy of this creamy dessert.
Traditional Key Lime Pie has a crunchy crust, usually made of graham cracker crumbs and melted butter. On top of the pie crust goes a tart filling made of the juice of key limes, combined with egg yolks and sweetened condensed milk. On top of that is an egg white meringue – soft peaks of whipped cream topping.
This pie doesn’t look green – the creamy filling ends up looking yellow because of the egg yolks, and the meringue is pure white! Also note that fresh key limes specifically are more aromatic than regular limes, so they are the authentic go-to lime in this recipe.
Key Lime Pie is always a crowd pleaser, with its perfect balance between the creamy thick lime filling, buttery graham cracker crust and pipe dollops of heavy whipping cream!
Origins?
Key limes are grown all over the world – but when it comes to the United States, the Florida Keys (and apparently, parts of California and Texas) are where it’s at. Let’s throw it back to NYC, 1931. It is said that the Borden company had written a recipe for the first classic key lime pie in their kitchen, as a twist on the company’s lemon cream pie recipe.
In another story though, millionaire William Curry’s cook had invented the recipe for her boss in the 1800s (in Florida). However, the earliest copy of the recipe in newspaper archives that can be found is in 1933, so the idea from the 1800s was chalked up to legend.
Today we won’t be making key lime pie though. You’ll need a lot of ingredients and time, it can be messy, (and we all want a quick recipe that takes just 10 minutes or less). So we’ll be making something a little different … KEY LIME, NO BAKE PIE BITES. Yup – a raw vegan, blender snack recipe. One that you can bring with you as a snack wherever you go! (Plus, no need to worry that the stiff peaks of meringue will be smushed bringing it to grandma’s house).

Alright, Not Only 3-Ingredients: Okay, so these delicious key lime pie bites are technically not a 3-ingredient recipe. The reason for that was because the main dough was made of three simple ingredients: coconut, almond flour and dates. The lime was an extra add-in for the key lime flavor, so technically there are four main ingredients.
Still a super easy recipe to make though! No cutting, sauteeing, baking, frying or the likes. All we have to do is blend it up and shape the dough into little energy bites!
Substitutions
Lime: These provide the key lime flavor! Use fresh limes, not dried. You can use regular limes, or key limes if you specifically find those.
Coconut: I used unsweetened shredded coconut, but sweetened will work well too. With sweetened versions, it will not be refined sugar free though (depending if extra sugar was added).
Dates. Medjool dates are my favorite way to get natural sugars in a recipe, as well as bind together energy balls. (These represent all the good things life has to offer, dates are my favorite)! They should be very soft and almost caramel-like.
Almond Flour: Use cashew flour (grind up cashews in a spice grinder) or almond meal. Almond flour has the most buttery flavor and is the most accessible as compared to other nut flours, at least from what I’ve seen at the grocery store in my area. The buttery-ness of the almond flour is closer to mimicking a “raw” graham crackers crust.
3 Ingredient Key Lime Pie Bites Recipe Notes
- Press down into each ball to indent, then top with some vegan coconut cool whip to serve it as a little “pie”! Add the whipped cream right before serving and keep in a cool environment so it does not melt off.
- Crumble these balls into vegan vanilla ice cream to make a key lime pie ice cream cookie flavor!

3 Ingredient Key Lime Pie Bites
Equipment
- High-speed blender or food processor
Ingredients
- 1 lime zested
- ¼ cup shredded coconut, unsweetened
- ¼ cup soft, pitted dates
- ½ cup almond flour
- ¼ tsp vanilla extract optional, recommended
- Pinch salt
- Extra lime zest and coconut optional, for topping
Instructions
- Blend all ingredients together in a food processor until a dough forms.
- Shape into 6 balls.
- Sprinkle some lime zest and/or coconut on top of them, for color. Don't add too much lime zest or it will become bitter!
- Enjoy!
