Apple Pie Chia Pudding
Today we are making Cinnamon Apple Pie Chia Pudding! The crisp fall breeze whistles through the trees, the warm sunshine on a slightly cold day, the shedding leaves and changing colors, the apple season desserts – it’s fall. And I love fall! Any recipe that combines ingredients related to apples, cinnamon, nutmeg, pecans, maple syrup or other fall ingredients makes me want to do a dive straight into my kitchen and get to baking. Talk about feeling inspired!
Why is this based on chia pudding? This mighty seed has taken social media by storm as the perfect make-ahead breakfast, making it a popular choice in the morning over the last few years.
So this recipe is an apple pie inspired chia pudding! Who says you can’t combine your favorite fall dessert with breakfast? The pudding has a velvety base, with a freshly cooked topping of warm apples in coconut sugar with cinnamon. These parts are layered twice, making the topping mixture spread throughout the pudding!

Substitutions
Oat Milk: Substitute with another non-dairy milk of choice. Soy milk will be a high-protein option, but coconut milk, almond milk, cashew milk or others can work too. Oat milk has a sweet and nutty flavor, which is the one used in this recipe for best results.
Chia Seeds: Chia seeds are a specific seed that fluffs up when kept in liquid. Do not substitute with another seed.
Maple Syrup: Use agave nectar or another liquid sweetener of choice. This is optional as well – the apple topping was sweet enough that I didn’t feel the need to add this maple syrup into the chia base. However, you can add it if additional sweetness is desired.
Apples: Red apples work the best here, but yellow apples may also work. Green apples will be more tart than this recipe requires.
Coconut Sugar: Use brown sugar instead. Note that some brown sugar is not vegan, because it is processed with bone char. You can google a specific brand to find out whether their brown sugar is vegan. Or make it at home using xylitol (or monkfruit) and molasses!

Apple Pie Chia Pudding
Equipment
- Small Saucepan
- Rubber Spatula
Ingredients
For the Chia Pudding
- 5 tbsp chia seeds
- 1 cup oat milk
- 1 tbsp pure maple syrup optional
- ¾ tsp vanilla extract
- pinch pink salt
For the Apple Topping
- 2 medium red apples cored and diced
- 8 tsp coconut sugar
- ½ tsp ground cinnamon
- 4½ tsp room temperature water
Instructions
For the Chia Pudding
- Combine chia seeds with the other chia pudding ingredients in a medium bowl. Set this in the refrigerator for 15 minutes.
For the Apple Topping
- In a small saucepan over medium-low heat, mix together the diced apples with the other apple topping ingredients using a rubber spatula.
- Cook this mixture for 5-7 minutes, until the apples are softened.
- Turn off the heat and set the saucepan aside. Once the chia pudding in the refrigerator is set, begin to assemble the layers.
- Begin by adding half of the chia pudding mixture to a cup, followed by half of the apple topping. Repeat this once more to use up the remaining pudding and topping.
- Sprinkle on optional pecans, walnuts and other add-ins to the top of the pudding.
- Enjoy!
