Today we are making a Berries & Green Tea Popsicles Recipe (Low Carb)! So my weather app says it feels like 33 degrees (Celsius) outside … and I’m sure many of you, like me, would like to cool down around this time of year with a silky smooth dessert during this time of year. Worry not, I’ve found a solution – this is the perfect treat! A matcha-yogurt-granola-fruity breakfast parfait, made into a layered popsicle. I even prefer this rather than eating the same breakfast foods straight out of a cup!

Perfect Treat on a Summer Day

Growing up, the best part about a hot summer day was running to the freezer and grabbing a long Mr. Freezie (who remembers those?!), cutting the top off and chewing on the frozen juice chunks, then slurping up the leftover juice at the bottom of the freezie stick. Repeat with any type of popsicle, or with scoops of ice cream! But once I started making recipes at home, being able to customize a few simple ingredients and the amount of sugar that went into foods was important for me (plus, budget-friendly).

The great idea for this recipe came about after a while of eating breakfast foods that were a mix of everything in this popsicle. Chia seed pudding, topped with fresh fruit, with some vegan yogurt and oats or homemade granola. But after weeks of similar breakfasts, I found myself wanting to get out of that phase and try something different. It’s a hot day in the summer, and a recipe inspired by my favorite flavors for breakfast plus frozen as a dessert was a fun combination that left me feeling inspired to create more recipes that wouldn’t traditionally be found as in store-bought popsicles – eg. breakfast popsicles flavor! Breakfast Flavors in a Popsicle: The flavors of this popsicle take inspiration from a mix of breakfast items. Chia pudding (hence the matcha flavored chia seed pudding layer), granola (the crunchy granola at the top of the popsicle) and greek yogurt with fruit (the blackberry yogurt layer). Although you may not eat popsicles for breakfast, this combination is delicious and will remind you of summertime breakfast foods!

Low Carb: For those on a low carb diet, this is the perfect way to enjoy a low carb recipe on a hot summer day.

There are some simple substitutions to make for a low carb popsicle. When choosing a vegan yogurt, opt for one that has no sugar added – the best option is just plain vanilla. You can add in fresh berries to make it a berry flavor at home, rather than buying a pre-made berry yogurt with added sugar and carbs.

Next, low-carb sugar substitutes will need to be used for refined sugar-free popsicles (and for those on a keto diet). The maple syrup can be substituted with another liquid keto sweetener that has zero net carbs, such as monkfruit syrup. For the milk, use almond milk instead of oat milk for low-carb. The granola can be omitted as well, but each popsicle only has one teaspoon which will be 1-2 grams of carbs depending on the brand.

Substitutions: Yogurt & Granola

Yogurt: Vegan yogurt can be found in the natural or alternative dairy products aisle. Silk is one brand that makes a berry-flavored yogurt which you can use in this recipe. You can also buy any vanilla yogurt and make your own by blending in various fresh berries to make different flavors!

Granola: You can find granola in the breakfast aisle of the grocery store. There are many brands that are vegan – just check for milk or milk-derived ingredients on the label (or a label stating the product is vegan). Each popsicle only has 1 teaspoon of granola, which is about 1-2 grams of carbs depending on the brand.

Substitutions: Chia Mixture

Coconut Milk: Use full-fat, canned coconut milk. I recommend Thai Kitchen brand for it. This makes the recipe taste decadent due to the healthy fats, as opposed to using carton milk, or a lower fat vegan milk such as almond or cashew. It kind of acts like heavy cream in an ice cream recipe, giving it a creamy texture.

You can use cashew milk, soy milk (for a high protein milk), almond milk, macadamia milk or another plant-based milk that’s lower in fat, but the recipe will taste more icy as opposed to creamy popsicles.

Chia Seeds: These are little seeds that fluff up when they absorb moisture. Do not substitute with any other nuts or seeds. You can find them at a health food store or in the nuts and seeds aisle of the grocery store, with the baking items or with the natural foods.

Matcha Powder: This is pure green tea powder, which can be found at many general grocery stores. The best quality of matcha will be a bright green color as opposed to a dull green. Do not substitute for anything else.

Maple Syrup: Use other liquid natural sweeteners as a substitute, such as agave nectar or coconut nectar. If using maple syrup, make sure there is only one ingredient – just the maple syrup – on the label. It shouldn’t be pancake-style maple syrup with artificial sweeteners in it.

Oat Milk: Substitute with another plant-based milk, such as almond milk or cashew milk.

Berries & Green Tea Popsicles Recipe Notes

  • If you can’t find vegan berry-flavored yogurt, make some at home by blending fresh berries into vanilla yogurt. I used blackberry yogurt, but you can blend in fresh strawberries, raspberries, blueberries or blackberries. Alternatively, try a different kind of fruit, such as mango or kiwi instead of berries!
  • If you don’t have popsicle molds, you can use small plastic cups with wooden sticks in them to make your own molds at home.

  • Popsicle Molds

Ingredients
  

For the Matcha Layer

  • 2 tbsp chia seeds
  • 2 tbsp pure maple syrup
  • 2 tsp matcha powder
  • ¼ tsp vanilla extract
  • ¼ cup full-fat, canned coconut milk
  • ¼ cup oat milk

For the Yogurt Layer

  • ½ cup vegan berry-flavored yogurt

For the Granola Layer

  • 3 tsp vegan granola

Instructions
 

  • In a medium bowl, mix together all the ingredients for the matcha layer.
  • Pour a teaspoon of granola at the bottom of 3 different popsicle molds.
  • Layer each of the individual popsicles evenly with yogurt.
  • Top each mold evenly with the matcha chia popsicle mixture.
  • Put a popsicle stick into the top of each mold.
  • Freeze for 5-6 hours, or until fully frozen.
  • To remove the popsicles from the molds, run the molds under hot water to soften them up. Then slowly begin to pull the top off and release the popsicle from the mold.
  • Enjoy!
