Pure Vanilla Extract: Choose a high-quality vanilla extract, without additional caramel color or dyes. You can also use pure vanilla flavor, which is non-alcoholic so can’t have the “extract” label.
Maple Syrup: Use agave nectar or your favorite sweetener of choice. Choose a liquid sweetener instead of a dry one like brown sugar or coconut sugar, so there isn’t any grittiness from the sugar left in the mixture after it thickens up in the fridge.

Cappuccino Chia Seed Breakfast Pudding
Ingredients
- 9 tbsp chia seeds
- 1¾ cup oat milk
- 7 tbsp pure maple syrup
- 1 tsp vanilla extract
- 2 tsp instant coffee powder
- 1-2 pinches pink salt
- vegan whipped cream optional topping
Instructions
- Add together all the ingredients in a small bowl or glass cup. Give it a good stir.
- Taste the pudding and add a few extra pinches of coffee powder, if desired for a stronger coffee taste.
- Once all the ingredients are fully incorporated, place in the refrigerator for at least 20 minutes.
- If making more than one serving, separate the mixture into individual serving jars. Keep these refrigerated until ready to eat.
- Top the pudding with optional vegan whipped cream right before eating, if desired. Enjoy cold!
