Ingredients
  

  • tsp chia meal ground chia seeds
  • tbsp warm water
  • 6 tbsp salted vegan butter softened to room temperature
  • ¾ cups vegan white sugar
  • tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp pink salt
  • 2 tbsp vegan rainbow sprinkles

Instructions
 

  • In a small bowl, mix together the warm water and chia meal. Set aside for 15 minutes.
  • In another bowl, beat together the butter, sugar and vanilla with a whisk.
  • After 15 minutes, beat in the egg.
  • In a third bowl, sieve the flour, baking powder and salt.
  • Slowly pour this into the wet mixture, making sure not to overmix.
  • Lastly, stir in the sprinkles.
  • Line a baking tray with parchment paper.
  • Use a cookie scoop to make 8 cookies, evenly separated on the tray.
  • Place these in the freezer for at least 2 hours.
  • About 15 minutes before removing the tray from the freezer, turn the oven on to 350 degrees F.
  • Once the cookies have been chilled at least two hours, transfer the tray into the hot oven at 350.
  • Bake for about 11 minutes. Do not over bake – the cookies will bake more as they cool down, making them chewy rather than too crunchy.
