  • 2 Bowls one medium, one large
  • Silicon Air Fryer Tray recommended
  • Rubber Spatula
  • Butter Knife

Ingredients
  

  • 2 tsp ground cinnamon
  • tbsp xylitol
  • 2 medium sweet potatoes sliced into long, thin fries
  • 4 tbsp avocado oil
  • ¼ tsp pink salt
  • ¼ cup vegan semisweet chocolate chips

Instructions
 

  • Mix the xylitol and cinnamon in a shallow bowl and set aside.
  • In a large bowl, toss the avocado oil with the potato slices. Sprinkle on the salt, then toss again.
  • Sprinkle over the cinnamon-xylitol mixture and give it one more toss.
  • Place an optional (but highly recommended) silicon tray in an air fryer. If you don't have one, lay out parchment paper (with some additional pieces hanging a bit off the side to be able to pull the fries out later). Evenly spread the sweet potato fries on the tray. Do not overcrowd it – you may have to repeat this, depending on the size of your air fryer. You can also bake it.
  • Air fry at 425 degrees F for 16-18 minutes, flipping the pieces halfway through the time.
  • A few minute before the fries are done, boil water in a stovetop pot.
  • Once boiling, remove from the heat. Place a bowl larger than the pot over top, then add in the chocolate.
  • Stir with a spatula to gently melt the chocolate.
  • Once the fries are done, remove them from the air fryer and set the silicon tray or parchment paper on a heat proof surface.
  • Use a butter knife to drizzle the melted chocolate over the fries.
  • They will be very hot, so wait for them to cool just a bit before eating. Then enjoy hot and fresh!

Notes

  • Storage
    • Store the fries and melted chocolate in separate airtight containers. The fries can stay for up to two days. Reheat them in the air fryer for a few minutes when ready to eat.
    • Reheat the chocolate by melting it in the microwave or placing the container in a bowl of hot water.
