Ingredients
For the Peanut Butter Chia Pudding
- 2 tbsp creamy peanut butter
- ¼ cup plain, unsweetened vegan yogurt
- 1 tbsp pure maple syrup
- 1 tbsp chia seeds
- ½ tsp vanilla extract
- pinch pink salt
For the Chocolate Chia Pudding
- ¼ cup plain, unsweetened vegan yogurt
- 1 tbsp cacao powder
- 1 tbsp chia seeds
- 1 tbsp pure maple syrup
- ½ tsp vanilla extract
- pinch pink salt
For the Chocolate Fudge Layer
- ¼ cup Medjool dates pitted
- pinch pink salt
- 2 tbsp almond flour
- 1 tsp cacao powder
- ¼ tsp vanilla extract
For the Peanut Layer
- 2 tbsp roasted peanuts chopped
Instructions
- For the peanut butter and the chocolate chia puddings, take out two separate bowls.
- In each bowl, add in the ingredients of each pudding separately. For the chocolate pudding, sift the chocolate into the bowl through a sieve, to ensure no clumping.
- Stir each pudding to combine the ingredients. Place the bowls in the refrigerator while moving onto the next step. Start a 20-minute timer at this step.
- For the chocolate layer, blend together all ingredients in a high-speed blender, until a dough forms.
- Once the pudding has been refrigerated for at least 20 minutes, get a parfait glass to begin the layering.
- Layer the chocolate pudding on the bottom, followed by the peanut butter layer, the chocolate fudge, then the crushed peanuts on top. Feel free to swap the fudge and pudding layers as desired.
- Enjoy it right away, or refrigerate for later!
