Coconut Bites Recipe (No Bake German Chocolate)
Today we are making a delicious treat: a German Chocolate Coconut Bites recipe! As it would be in German, schokolade! What is German Chocolate? Why not just regular old schokolade?
German chocolate contains a mix of chocolate, coconut and pecans. What is now called German Chocolate Cake was brought over to America by German immigrants!
These no bake energy bites are a great recipe for a sweet tooth. In other words, it’s like raw one-bite brownies, but with more than just the fudgy bit!
These use a few simple ingredients of pecans, dates, cacao and coconut in the base. After that, roll it around in extra coconut (anyone for more coconut flavor?) and top it with a pecan!
In short, these contain a lot of healthy fats, natural sugars and lots of nutrition for a strong immune system!

Like Raw German Chocolate Cake: These healthy coconut bites are like eating a raw german chocolate cake filled with cacao, pecans and shredded coconut! The caramel-like dates make it all stick together for a delicious, no-bake recipe.
Substitutions
Vanilla Extract: This can be omitted, however it tastes better with vanilla! You can also use freshly scraped vanilla bean.
Cacao Powder: This is the unprocessed version of cocoa powder, which is a key ingredient in chocolate recipes. You can buy it at health food stores or online, or possibly a local grocery store. Alternatively, just use regular cocoa powder instead.
Desiccated Coconut: This is tiny flaked coconut, which is the best type for rolling in. The type of coconut blended into the dough does matter, because desiccated coconut is more for topping since it has the moisture removed. Use shredded coconut for the dough.
You can use either sweetened or unsweetened coconut, depending on your preference.
Medjool Dates: The best dates to use are Medjool dates (which are very soft and thick). If your dates are not super soft, then for best results soak them overnight in room temperature water, or in boiling water for 30 minutes. These provide just the right amount of sweetness and are the main ingredient holding the dough together. You may be able to use plump black raisins instead.
Pecans: Try substituting with raw almonds, macadamia nuts or cashews. Alternatively, use six tablespoons of almond meal or almond flour, however you may need to add more if required to help the dough stick together.
Coconut Bites Recipe Notes
- Drizzle this recipe with melted vegan milk chocolate or dark chocolate, or dip fully in a melted chocolate mixture before topping with coconut. This makes for double dark chocolate coconut bites!
- Use raw almonds instead of raw pecans in this recipe. Top with an almond instead to make it a raw “almond joy” bite (your favorite candy bar?!)
- Add a spoon of chia seeds into the dough for added nutrition and a little bit of crunch.
- Mix cacao nibs (like a “raw” chocolate chip) into the dough by hand. On the other hand, for a non-raw option, use mini vegan chocolate chips.
- Use a high speed food processor or blender to avoid having chunks of leftover dates and nuts in the dough.
- To add a surprise filling, add a nut or some coconut flakes for a nutty coconut filling surprise when biting into the energy bites.
- To make these into protein balls, try using protein powder instead of raw pecans. Add more dates until the dough forms the desired consistency.

Coconut Bites Recipe (German Chocolate)
Equipment
- Blender or Food Processor
Ingredients
For the Bites
- ½ cup raw pecans
- ¾ cup Medjool dates pitted
- 2 tbsp cacao powder
- 2 tbsp shredded coconut
- ¼ tsp vanilla extract
- Pinch pink salt
For the Topping
- 7 pecans for topping
- extra desiccated coconut for rolling the bites in
Instructions
- Blend all ingredients in a food processor until smooth, except the extra coconut and pecans.
- Shape into 7 balls. They should stick together very well.
- Roll each ball in the extra coconut, then top with one pecan each.
- Enjoy!
