Substitutions

Coconut Milk: Use full-fat, canned coconut milk for this recipe. To reduce the fat (and the richness in flavor) you can swap in a reduced fat, carton coconut milk. Carton milks are not as creamy, so that would be the last option. For a coconut-free version, use more unsweetened oat milk instead. You can also use cashew milk, almond milk or another plant-based milk of choice. To keep this recipe refined sugar-free, choose milks that do not contain added sugar in the ingredients (unsweetened version).

Berries: Buy a bag of frozen raspberries, blackberries or blueberries, which is usually cheaper than buying them fresh. If you have them fresh, you can also freeze them when you freeze the coconut milk. For a different flavor, swap the various berries in with blueberries, strawberries, dark sweet cherries or blackberries instead.

Mango: The original unicorn frappuccino uses a mango syrup, so this recipe uses frozen mango chunks. You can try using frozen pineapple instead. Frozen mango chunks are usually cheaper than the fresh version, but you can also chop up fresh mango and freeze it to use.

  • To keep this recipe refined sugar-free, omit the whipped cream. However, to make it look like the popular frappuccino, you’ll want a big mountain of whip on top (it just makes it look so aesthetic)! Find vegan whipped cream at many grocery stores, next to the regular whipped cream. There are brands that make coconut-based (like Gay Lea, which I always use), almond-based and soy-based, to name a few.
  • To get the pure light blue and light purple colors like in the picture, you can omit the blackberries and blueberries and use a half teaspoon of butterfly pea powder (blue), and taro powder (purple). These ingredients are not as easy to find, but you can buy them online and they provide a beautiful color to your drinks. This is what I originally used, but when I don’t want the hassle of finding special ingredients, it’s much easier to make it with berries!

Ingredients
  

For the Red Layer

  • 5 tbsp full-fat coconut milk
  • ¼ cup oat milk unsweetened, chilled
  • 1 tbsp pure maple syrup
  • 1 tbsp frozen raspberries

For the Blue Layer

  • ¼ cup full-fat coconut milk
  • 5 tbsp full-fat coconut milk chilled, not frozen
  • ½ cup oat milk unsweetened, chilled
  • 2 tbsp pure maple syrup
  • 1 tbsp frozen blueberries
  • ¼ cup frozen mango chunks

For the Purple Layer

  • 10 tbsp full-fat coconut milk
  • ½ cup oat milk unsweetened, chilled
  • 2 tbsp pure maple syrup
  • ½ tsp vanilla extract
  • 1 tbsp frozen blackberries

Instructions
 

  • The day before making this recipe, take an ice cube tray. Separately freeze the coconut milk required for each of the layers overnight.
  • The next day, when the milk is frozen, take a tall glass for the frappuccino.
  • Blend together the ingredients for the blue layer until creamy, then pour it into the glass.
  • Repeat with the red layer ingredients, layering it in the cup over the blue once a creamy mixture forms.
  • Lastly, blend together all the ingredients for the purple layer, then pour it over top.
  • Top with optional vegan whipped cream, raspberries, and a sprinkle of taro powder or butterfly pea powder for color. Enjoy fresh!
