  • cups dry couscous
  • 2 cups vegetable broth
  • 2 tbsp avocado oil
  • 2 medium garlic cloves minced
  • cup fresh lemon juice
  • 1 tsp pink salt
  • ½ tsp black pepper
  • 4 tbsp fresh parsley chopped

Instructions
 

  • Cook the couscous according to the instructions on the package, using broth instead of water to cook. This will take about 15 minutes to boil the broth, then add the couscous and let it absorb the water and fluff up.
  • Once this is done, transfer the couscous in a bowl.
  • In a small skillet over medium heat, add the avocado oil.

  • Remove the garlic from the heat and toss it with the couscous in the bowl.
