Substitutions

Rolled oats have a lower cooking time, and quick oats cook the fastest. For those with a gluten-allergy, find gluten-free specific oats by checking the package label.
Oat Milk: Substitute oat milk with any other non-dairy milk of choice. Taste test the milk before using in the recipe. If it tastes good plain, then it will work for this oatmeal. Unsweetened almond milk, cashew milk, soy milk or even coconut milk may work here. Full-fat, canned coconut milk in this recipe will make a much richer recipe with a coconut taste.
Pumpkin Puree: Use a can of pumpkin puree, or make your own at home using real pumpkin! Pure pumpkin puree should only have one ingredient on the can label. Do not use pumpkin pie filling, as it contains sugar, spices and other additives. This will contain refined sugar and you will need to adjust the amounts of other ingredients, if using pumpkin pie filling instead of pure pumpkin puree here.
Maple Syrup: Pure maple syrup is used in this recipe – this is not pancake syrup! Pure syrup only has one ingredient on the label. You can also use agave nectar or another sweetener of choice, such as monk fruit sweetener for a keto sweetener.
Vanilla: For the best vanilla flavor, use pure vanilla extract or vanilla flavor, without added caramel color or dyes. Vanilla flavor doesn’t contain alcohol, so it won’t have that “extract” label, but will still taste just as good.

- To make this oatmeal bowl taste more like pumpkin pie, top with vegan whipped cream! Gay Lea brand makes delicious coconut-based whipped cream that comes from an aerosol can, similar to dairy-based whip.
- This oatmeal bowl doesn’t have any chia seeds in it, but feel free to mix some in.
- Serve this oatmeal with a splash of milk on top of the oatmeal, as in the photos. It adds an extra layer of creaminess, aside from cooking the oatmeal with milk!

Easy Pumpkin Pie Spice Oatmeal Bowl
Equipment
- Small Saucepan
Ingredients
- ⅓ cup oat milk
- 2 tbsp + 2 tsp dry quick-cooking oats
- ¼ cup pumpkin purée
- ⅛ tsp ground nutmeg
- ⅛ tsp ground ginger
- ½ tsp ground cinnamon
- 1 tsp pure maple syrup
- ¼ tsp vanilla extract
- pinch pink salt
- vegan chocolate chips optional topping
- pecans optional topping
Instructions
- Mix together all ingredients, except the optional toppings, in a small saucepan over medium heat on the stove top.
- Stir every so often, allowing the oatmeal to cook. This will take a few minutes. Add additional sugar as desired.
- Once the oatmeal is cooked, turn off the heat.
- Pour the oatmeal into a mason jar or a bowl. Top with optional toppings. Additionally, add in cold milk over the oatmeal before serving, if desired. (Personally, this makes it taste so much better). Enjoy!
