If your peanut butter has been stored in the fridge, or has been opened for a long time, it may have hardened – be wary of this, because you won’t be able to dip the bananas into a jar of nut butter if you can’t easily dip a spoon in and have the peanut butter “drip” off.
Note: Easily heat up a refrigerated jar of peanut butter by placing in a bowl of boiled water.

Frozen Chocolate Covered Peanut Banana Popsicles
Equipment
- 2 Toothpicks
- 2 Medium Bowls
- Wax Paper
Ingredients
- 2 medium ripe bananas
- jar of peanut butter
- ½ cup vegan dark chocolate chips
- 1 tsp refined coconut oil
- 4 tsp roasted peanuts chopped
Instructions
- Peel and cut each banana in half. Stick a toothpick into each end, to make 4 banana "popsicles."
- Place the wax paper on a freezer-safe plate and set aside.
- If the peanut butter is too firm, leave the jar in a bowl of hot water for some time to heat it up.
- Once the peanut butter is softened enough, dip the banana popsicles in the jar until fully coated. If there's too much, let the excess drip off.
- Place the bananas on the wax paper, then set in the freezer.
- Bring water to a boil in a stovetop pot.
- Once boiling, remove the water from the heat. Place a bowl with the chocolate chips and coconut oil over top of the pot.
- Stir to let the chocolate melt fully.
- Remove the popsicles from the freezer, then using a butter knife or spoon, pour the melted chocolate over the bananas. You can drizzle it back and forth, so that the bananas are fully coated.
- Sprinkle the roasted peanuts on top.
- Place back in the freezer for at least 2 hours, or until firm. Then enjoy!
