Ingredients
  

For the Filling

  • 4 medium pears cored and cut into 1/2-inch slices
  • 1 tsp fresh lemon juice
  • cup + 2 tbsp refined coconut sugar
  • 2 tbsp refined coconut oil melted // keep extra for coating the baking dishes

For the Topping

  • 1 cup rolled oats
  • 1 cup + 2 tbsp xylitol
  • ½ cup refined coconut oil melted
  • ½ cup almond flour
  • ½ tsp ground cinnamon

Instructions
 

  • Preheat the oven to 375 degrees F.
  • Toss pears and lemon juice together in a bowl until coated.
  • Pour melted coconut oil and coconut sugar over pear mixture; toss to coat.
  • In another bowl, mix together the topping ingredients, until a crumble forms.
  • Lightly grease a baking dish (or 4 individual dishes) with oil.
  • Evenly transfer the pear mixture into the baking dish. Sprinkle the crumble over the pears.
  • Bake for about 45 minutes. Then remove from the oven and allow to cool on a heat-proof surface for 10 minutes.
  • Transfer into serving dishes, topping with vegan ice cream or whipped cream to serve. Enjoy!
