Healthy Vegan Loaded Sweet Potato Nachos Recipe

Today we are making a Healthy Vegan Loaded Sweet Potato Nachos Recipe! These nachos are a colorful, nutrient-packed twist on classic nachos! Instead of tortilla chips, crispy roasted sweet potato slices create a sturdy and flavorful base, adding natural sweetness to balance out the savory toppings. Each bite is loaded with a mix of textures—creamy avocado, juicy tomatoes, crunchy bell peppers, and zesty lime—making this dish just as satisfying as traditional nachos but with a wholesome, plant-based upgrade.

To add heartiness and protein, these nachos are topped with crumbled vegan burger “beef” and a flavorful homemade bean filling, giving them a rich, satisfying bite. A drizzle of thick vegan yogurt or sour cream adds a creamy contrast, while fresh cilantro and shredded lettuce provide a refreshing crunch. The mix of ingredients makes every bite exciting, with a perfect balance of creaminess, crispness, and bold flavors.

These nachos are also completely customizable! You can swap ingredients based on what you have, add extra spice with jalapeños, or even drizzle on a smoky vegan cheese sauce for more indulgence. Whether you’re serving them as a fun appetizer, a light meal, or a game-day snack, these loaded sweet potato nachos prove that healthy eating can still be bold, delicious, and totally crave-worthy!

Why You’ll Love These Loaded Sweet Potato Nachos

Nachos Without The Chips: Unlike regular nachos that are usually fried in oil, these roasted sweet potato slices hold their texture while adding a naturally sweet, caramelized flavor that pairs perfectly with the savory ingredients, all while giving you tons of nutrients!

Protein-Packed & Completely Satisfying: With hearty vegan “beef” crumbles, a rich bean filling, and creamy avocado, these nachos are not just a snack. They’re a balanced, nourishing meal that keeps you full and energized!

Substitutions

Vegan Patty: If you don’t have a vegan burger patty, you can substitute with cooked brown lentils, crumbled tofu, or store-bought vegan taco crumbles for a similar hearty texture. You’ll need to season the lentils and tofu with desired seasonings before using.

Beans: The homemade bean filling adds protein and creaminess, but if you’re in a hurry, you can use vegan refried beans with a squeeze of lime for a quick alternative.

Sweet Potato: If you don’t have sweet potatoes, use regular white potatoes instead! They will take a few minutes longer to crisp up (around 15-17 minutes), so keep an eye on them as they bake.

Sweet Potato Nachos Recipe Notes

  • Since sweet potatoes have a natural sweetness, the toppings should add contrast. The creamy vegan sour cream or yogurt, fresh veggies, and zesty lime juice create the perfect balance of flavors. Swap the veggie toppings in and out as preferred.
  • Make these nachos your own by adding jalapeños for spice, a drizzle of vegan queso for extra creaminess, or a sprinkle of toasted pepitas for crunch.
