I remember eating mint thins or peppermint chocolate patties when I was a kid, one step below selling Girl Scouts Thin Mints and Samoas Cookies. The frosty taste of the mint with the sugary chocolate coating was just perfection!
The origins of mint chocolate chip ice cream began in 1973 by a culinary student while studying at a college in England, where she entered a competition to make ice cream as a dessert (Mint Royale was the name of the mint chocolate chip ice cream) for Princess Anne and Captain Mark Phillips’ wedding at Westminster Abbey. Mint chocolate combinations began as early as 1939 though, with the Cooky-Mint Girl Scout cookie (and Thin Mints, also a mint chocolate combination, debuting in 1959 and being their bestselling flavor).

Coconut Milk: Use full-fat, canned coconut milk before freezing it into ice cubes. I recommend Thai Kitchen brand for milkshake recipes like this one. This makes the recipe taste decadent like whole milk would, due to the healthy fats, as opposed to using carton milk, or a lower fat vegan milk such as almond or cashew. It kind of acts like heavy cream in an ice cream or frappuccino recipe, giving it a creamy texture.
You can use cashew milk, soy milk (for a high protein milk), almond milk, macadamia milk or another plant-based milk that’s lower in fat, but the recipe will taste more icy as opposed to creamy.
Maple Syrup: You can control the amount of sweetener as desired in this drink, so there is not as much sugar as a milkshake would have. Substitute with another liquid, natural sweetener, like agave nectar.
Mint Leaves: Use fresh mint leaves. Do not substitute with any other herbs, as mint is the key ingredient for flavor and color here! Using mint extract instead is not the same in terms of color and the light minty flavor.
Vanilla Extract: For best results, use pure vanilla extract, without added artificial colors and dyes (like caramel color). You can use artificial vanilla flavor as well. However, it may come off as more bitter and not as smooth or sweet as the pure version.

- Gay Lea brand makes delicious coconut cream based whip. This is usually next to the regular aerosol cans of whipped cream in the grocery store. For a non-coconut-base, ReddiWhip makes an almond based whip instead. There may be other brands providing soy-based whip instead of a nut-based one as well, depending on where you live.

Healthy Vegan Mint Chocolate Chip Milkshake Recipe
Equipment
- High-Powered Blender or food processor
Ingredients
- ⅔ cup oat milk chilled
- ⅔ cup oat milk frozen into ice cubes
- ¼ cup full-fat, canned coconut milk frozen into ice cubes
- ⅓ cup fresh mint leaves
- 1-2 tbsp pure maple syrup
- ¼ tsp vanilla extract
- ¼ medium ripe avocado frozen
- 2 tbsp vegan semisweet chocolate chips
- vegan whipped cream optional topping
Instructions
- Blend together all ingredients, except the chocolate chips and whipped cream, in a high speed blender until smooth.
- Add in the 2 tbsp chocolate chips, and pulse the blender a few times to break up the chocolate, just enough to leave small flecks throughout the milkshake.
- Pour smoothie into a tall glass. Top with optional vegan whipped cream, extra chocolate chips and mint leaves. Enjoy!
