Ingredients
- 1 tbsp chia meal
- 3 tbsp lukewarm water
- 7 tbsp oat flour // make at home: grind quick-cooking or rolled oats in a spice grinder until it forms a flour
- ¼ cup xylitol
- 1½ tsp baking powder
- 11 tsp cacao powder
- pinch pink salt
- 3 tbsp refined coconut oil melted
- ¼ tsp vanilla extract
- 2 tbsp vegan dark chocolate chips
Instructions
- Preheat oven to 325 degrees F.
- In a small bowl, stir together the chia meal and water. Let it sit for 15 minutes to form a chia "egg."
- In another bowl, mix together the oat flour, xylitol, baking powder, cacao powder and pink salt.
- Once the chia egg is done, whisk in the coconut oil and vanilla extract.
- Make a well in the dry ingredients and mix the wet ingredients in.
- Line the baking tray with parchment paper. Evenly pour the brownie mixture in, and top it with chocolate chips. It should be a thin batter and cover the entire pan.
- Bake for 20 minutes, turning the tray around halfway through.
- After baking, remove from the oven. Let it cool for a half hour, as the brownie brittle will get that "brittle" texture after it fully cools.
- Once it's fully cooled, crack the brittle using a knife into 4 servings. Enjoy!
