Today we are making a THICK Blended Iced Caramel Latte Recipe! This is almost similar to a caramel frappuccino with a coffee flavor. I feel like I’ve one-upped my Starbucks addiction with this. Throwback to four years ago, I used to drink 2-3 frappuccinos in a DAY because I had just got my first on-campus job at my university, and someone got a bit too excited with the three Starbucks we have on our one campus!

It got to the point where I’d be ordering wacky frapps off the secret menu (which is not in store, it can be found online) through an app, so the baristas didn’t have to wait for me to read off all the pumps of this syrup and that sauce that they were supposed to add in.

It also made it easier for me because I’d rotate between Starbucks locations so I wouldn’t have frustrated baristas with my multiple times a day bizzare orders! Eventually, I grew out of the Starbucks phase (it was emptying my wallet and adding onto my waistline!)

So HERE I’ve recreated a caramel frappuccino with basic ingredients, using a hint of banana thrown in (the best part about FROZEN banana are that they make the drink so much more creamier than regular bananas) and a few easy steps!

Rather than buy a drink like this at a local coffee shop, this is the perfect way to control the amount of sugar in the drink (and take it to the next level with all natural sweetener – banana)! It’s my go-to recipe to make at home on hot days!

Substitutions

Instant Espresso Powder: This is the best way to get the coffee flavor without diluting the recipe with liquid. You can substitute up to a quarter cup of the non-dairy milk with cold brew or iced strong coffee, if you have an espresso machine.

Cold Milk: Oat milk works the best here for a creamy taste. You can also use almond milk, soy milk or other vegan milk alternatives for whole milk.

Coconut Sugar: Use brown sugar instead.

Coconut Milk: Use full-fat, canned coconut milk. This is a great way to make caramel rather than using heavy cream! For an even creamier caramel, use all coconut cream instead of coconut milk in the can. To make coconut cream, leave the can of milk in the refrigerator overnight. Then scoop out the white fat that comes to the top – this is all coconut cream!

For a nut-free version, use oat milk instead of coconut milk here.

Ingredients
  

For the Caramel Sauce

  • 3 tbsp coconut sugar
  • ¼ cup canned coconut milk
  • pinch pink salt

For the Drink

  • 2 tsp instant coffee
  • 1 medium frozen banana peeled and chopped into chunks
  • 1 cup non-dairy milk
  • 6-7 large ice cubes
  • vegan whipped cream optional, topping

Instructions
 

  • To make the caramel, heat together the caramel ingredients in a saucepan over medium heat.
  • Keep stirring until it begins to boil, then set the heat to low and stir for around 15 minutes until it begins to thicken.
  • Once the caramel is ready, let it cool for a half hour before using.
  • Blend together all frappuccinos ingredients with the caramel sauce but leave about one spoon of it aside. Keep blending the rest of the ingredients until it makes a smoothie.
  • Pour coffee mixture into a tall glass. Top with whipped cream and the extra caramel drizzle on top. Enjoy cold!
