Ingredients
  

  • 1 medium lauki (bottle gourd) peeled and chopped into small cubes
  • 1 tbsp mustard oil
  • ½ tsp cumin seeds
  • 1 tsp fresh ginger finely grated
  • 1 small tomato chopped
  • ½ tsp turmeric powder
  • ½ tsp red chili powder
  • ½ tsp coriander powder
  • ½ tsp garam masala
  • pink salt to toaste
  • ½ cup warm water
  • 1 tbsp fresh cilantro chopped, for garnish

Instructions
 

  • Heat oil in a pan on medium heat. Add cumin seeds and let them crackle.
  • Add ginger and sauté for a minute until fragrant. Add chopped tomatoes and cook until soft.
  • Stir in turmeric, red chili powder, coriander powder and garam masala. Cook for a minute to release the flavors.
  • Add the chopped lauki, salt, and ½ cup water. Mix well and cover the pan. Let it cook on low heat for 10-12 minutes, stirring occasionally, until the lauki turns soft.
  • Remove from the heat. Garnish with fresh cilantro and serve hot with roti or rice!
