Dates: Use pitted Medjool dates. They should be super soft and easily squish-able to the touch. If your dates aren’t super soft, then soak them in boiling hot water for a half hour, then drain the way and pat the dates dry, before using. Do not substitute with another dried fruit.

Almond Flour: Substitute with almond meal, which is the same as almond flour, but the almonds have the skins on when they’re ground up – so almond meal has brown flecks in it, from the almond skin. Or you can grind up raw walnuts and cashews to make walnut or cashew flour.

Cashew Butter: Substitute with almond butter. However, cashew butter has a butterly underlying flavor that almond butter does not, so it will not taste as much like a “lemon shortbread” flavor.

  • Mix the poppyseeds in by hand.
  • Shape the dough into 6 balls.
