The prep time for this recipe takes about 10 minutes to zest and juice the lemon, along with getting all the ingredients together. Then you mix it all in a glass jar or a bowl until it’s a pudding consistency, before placing it in the refrigerator. The total time is about 30 minutes, factoring in the for the 20 minutes of chilling while the chia seeds fluff up and absorb the moisture.
Substitutions
Lemon: One fresh medium lemon will work to squeeze out the juice and to get the lemon zest from. Do not use bottled juice or dried zest, as the taste is not as fresh. Bottled juice also has a more acidic flavor.
Dry Oats: You can substitute the quick-cooking oats with rolled oats instead. Do not use steel-cut oats, as they will not be easy to digest uncooked.
Oat Milk: Substitute with another unflavored, non-dairy milk of choice such as almond milk or cashew milk.
Agave Nectar: Substitute with pure maple syrup (not pancake syrup)! Coconut nectar, date syrup, brown rice syrup or another liquid sweetener of choice may work as well. Note that they will all have varying flavor profiles.
Vegan Yogurt: I used Riviera brand of plain coconut milk vegan yogurt here. However, you can use any unflavored, plain vegan yogurt.

Lemon Yogurt Chia Parfait
Ingredients
- ½ cup unsweetened vegan yogurt
- ½ cup oat milk
- 3 tbsp black chia seeds
- 2 tbsp dry quick-cooking oats
- 2 tsp agave nectar
- 2 tsp freshly squeezed lemon juice
- 1 tbsp fresh lemon zest about 1 medium lemon // add more as desired
- pinch salt
- ¼ tsp vanilla extract
Instructions
- Mix together all ingredients in a medium bowl until a pudding-like consistency forms.
- Place the yogurt mixture in the refrigerator for 20 minutes. After 20 minutes, the chia seeds will have thickened up.
- Remove from the refrigerator after this time, and enjoy!
