Substitutions

Black Beans: These are also known as black turtle beans. Substitute with a different variety of beans, such as pinto beans. These will be the most similar in taste and texture.

Red Pepper: Substitute with green, yellow or orange bell peppers instead. Alternatively, try using mushrooms instead of bell peppers.

Olive Oil: Use avocado oil instead.

Lemon Juice: Try a drizzle of fresh lime juice if you don’t have fresh lemons on hand.

White Onion: Substitute with red onion, although it will have a more bitter taste than white onion.

Spices: If you can find taco seasoning at your grocery store, it may be easier to use this instead of buying all the spices separately. In that case, substitute the mix of paprika, smoked paprika, garlic powder and onion powder with just taco seasoning. Start with 1 teaspoon and add more as needed.

Ingredients
  

  • 2 tbsp extra-virgin olive oil
  • 1 medium white onion finely diced
  • cups cooked black beans
  • 1 cup fresh corn kernels
  • ½ medium red bell pepper diced
  • 1 tsp smoked paprika
  • 1 tsp regular paprika
  • tsp garlic powder
  • tsp onion powder
  • ¼ tsp ground black pepper
  • 1 tsp salt
  • pinch red chili powder
  • fresh lemon juice for serving
  • fresh cilantro chopped

Instructions
 

  • In a heated skillet over medium-high heat, add the oil.
  • Add in the white onion. Stir for a few minutes, until translucent.
  • Add in the beans, corn and red bell pepper. Stir to combine, then stir in the spices until fully incorporated.
  • Stir the mixture around for another 3-4 minutes.
  • Remove the skillet from the heat and add the black bean mixture into a large bowl.
  • Drizzle with lemon juice and chopped cilantro before serving. Enjoy!
