However, it can also act as a substitute. If using pre-ground nuts (like almond flour or almond meal), start with half the amount of cashews as what the recipe calls for. Add more as needed to get the mixture to come together as you blend. You won’t need an entire half-cup, if using flour instead of the raw nuts.
Medjool Dates: Medjool dates are the softest type of date variety for blending into no bake energy ball recipes. Deglet Noor dates may work as well, or any other very soft date. You should easily be able to squish the dates between your fingers. Using dates works well here because they’re a natural sweetener and there’s no need for other added sugars. You may be able to try plump black raisins instead of dates though.

No Bake Chai Spice Energy Balls (Vegan & Gluten Free)
Equipment
- High-speed blender or food processor
- Spice Grinder
Ingredients
- ½ cup raw cashews not salted/roasted
- ⅔ cup Medjool dates pitted
- 12 small green cardamom pods
- ⅛ tsp ground cinnamon
- ¾ tsp ground ginger
- pinch pink salt
- 2 tbsp coconut sugar
Instructions
- Add all the 12 cardamom pods into a spice grinder. Grind them up until it's a fine powder.
- Add this powder, along with the other ingredients for the bites (except the optional coconut sugar) into the bowl of a food processor.
- Blend until a sticky dough forms. There should not be date or nut chunks left.
- Shape the dough into 8 even balls. (You may want to slightly oil your hands with a neutral oil, like avocado oil, before doing this. This helps to avoid the dough sticking all over your hands).
- Place the coconut sugar in a small bowl. Roll each ball in the sugar, then transfer it to a container.
- Store at room temperature in an airtight container until ready to eat. Enjoy!
