Today we are making No Bake Peanut Butter Brownie Bites! Don’t you just looove anything brownie-related?! Brownie batter (licking it right off the spatula before it gets a chance to go in the oven), brownie bites (reminiscent of Costco one bite brownies!) or full out giant brownies loaded with whipped cream? I sure do!

This recipe is included in the all-things-brownies list! Here we use a few healthy ingredients to make fudgy no bake brownie bites. These require minimal equipment and use healthy ingredients you might already already have in your pantry!

What could top quick and decadent dessert-like energy balls? Well, that’s the best part – it’s basically only three simple ingredients and two steps: blend, then refrigerate!.

Convenient and Decadent: This recipe makes a fudgy brownie texture with a rich chocolate flavor. They’re so easy to make in the blender and pop into the refrigerator for an even chewier texture. Whenever a chocolate craving hits but I’m too lazy to follow a long recipe, I love to make these to store as a little afternoon snack or after-dinner dessert for the upcoming week!

Wholesome Ingredients: These energy-packed balls are made with nutritious ingredients for a healthy snack: pure maple syrup for the sweetener, then whole peanuts with raw cacao powder and a little vanilla.

It’s the perfect treat for the whole family! When there’s healthy snacks to reach for, then it’s much easier to avoid unhealthy, processed junk food. Hence why I love to make a delicious recipe and share it with my family so it keeps everyone off the store-bought refined snacks rollercoaster!

Substitutions

Peanuts: For best results, use raw, unroasted, unsalted peanuts for this recipe. This also really reduces the added sodium, as opposed to using pre-roasted and salted ones. However, if using the latter, then omit the additional salt in the recipe.

Cacao: Cacao powder is the raw, unprocessed version of cocoa powder. You can also use regular cocoa powder, as the taste is almost the same. I love this brand from Organic Traditions.

Maple Syrup: Use pure maple syrup, not the pancake syrup (no Aunt Jemima here!). The only ingredient on the bottle should be maple syrup. Alternatively, use another liquid sweetener, such as agave syrup, brown rice syrup, coconut nectar or other.

Using pure maple syrup makes the recipe refined sugar free as well, unlike corn syrup or other sweeteners that may be found in refined sugar desserts. Medjool dates may work as well in the same ratio as the syrup, for a raw sweetener.

No Bake Peanut Butter Brownie Bites Notes

  • Mix in vegan mini chocolate chips by hand into the brownies to make them into double chocolate bites!
  • To level this up to triple chocolate (major sweet tooth anybody?), drizzle melted chocolate on top of the bites after adding in chocolate chips. Then place these in the fridge to harden the chocolate and enjoy!
  • Roll these bliss balls in coconut flakes for a chocolate-coconut flavor!

These No Bake Peanut Butter Brownie Bites are like a healthy one bite brownie made with three ingredients: peanuts, cacao and maple syrup!

Equipment

  • High-speed blender or food processor

Ingredients
  

  • 2⅔ cups (400g) raw, unsalted peanuts
  • ½ cup (48g) cacao powder weigh the cocoa powder if possible. Measuring it with tablespoons causes discrepancies in the amount used
  • ½ cup (120mL) pure maple syrup
  • 1 tsp vanilla extract omit if desired
  • pinch pink salt omit if peanuts are roasted

Instructions
 

  • Put all ingredients in a high speed blender. Omit the pinch of salt if the peanuts are already salted.
  • Blend until no chunks remain and a dough forms.
  • Shape into 16 bite-sized balls and place in refrigerator on a tray lined with parchment paper or a baking sheet, for a half hour.
  • Enjoy! Keep refrigerated for the bites to maintain a chewy texture.
