Ingredients
  

For the Snickerdoodle Dough

  • ½ cup almond flour
  • ½ cup raw cashews
  • cup Medjool dates pitted
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ½ tsp vanilla extract
  • pinch pink salt

For the Cinnamon Coating

  • 2 tbsp coconut sugar
  • 1 tsp ground cinnamon

Instructions
 

  • Add all the ingredients for the snickerdoodle dough into a food processor. Blend until a dough forms. There should not be any date or nut chunks left.
  • Shape the dough into 10 balls. Note: You can slightly oil your hands with a neutral oil, like avocado oil, so the dough doesn't stick.
  • In a small bowl, mix together the cinnamon sugar coating.
  • Roll each ball in the coating, then transfer to an airtight container.
  • Store at room temperature until ready to eat. Enjoy!
