Flour: This recipe uses all-purpose flour. I have not tried it with a gluten-free flour blend, but this may work in a 1:1 substitution. Do not substitute with whole wheat flour, as it will make the topping dense and not as tasty!

Butter: Melt Organics make salted vegan butter sticks that are perfect for this vegan recipe. Make sure to use vegan butter, not a margarine-style spread. You can also try using refined coconut oil, that does not smell or taste like coconut (it should not be virgin or extra-virgin).

Brown Sugar: Try using light brown sugar instead of dark. Coconut sugar as a healthier alternative will change the taste and texture, so try at your own risk.

Oats: Use old-fashioned, dry rolled oats. You can try quick-cooking oats as a substitute.

Cinnamon: Use ground cinnamon, or make your own fresh by blitzing up a cinnamon stick in a spice grinder.

Lemon Juice: For best results, use fresh lemon juice, not the bottled kind. Bottled juice usually tastes more acidic.

Ingredients
  

  • 3 medium crisp red apples
  • 6 tbsp vegan butter at room temperature
  • ¾ cup all-purpose flour
  • ¾ cup brown sugar
  • ½ cup dry rolled oats
  • ½ tsp pink salt
  • ½ cup pecans chopped
  • tsp ground cinnamon
  • 1 tbsp fresh lemon juice

Instructions
 

  • Preheat oven to 350 degrees F.
  • Grease the bottom of the baking tray with extra vegan butter.
  • In a large bowl, mix together the flour, ½ cup of brown sugar, oats, pecans and salt. Stir in the butter.
  • Place the apples at the bottom of the baking dish and toss with the remaining ¼ cup of brown sugar, cinnamon and lemon juice.
  • Spread the apples over the base of the baking dish in an even layer.
  • Press the crumb mixture together to create clumps, then sprinkle it over the apples.
  • Bake for 1 hour, until the apples are soft.
  • Once the time is up, remove the baking dish from the oven. Allow it to cool on a heat proof surface for 10-15 minutes.
  • Then cut into 6 servings, topping each serving with vegan cool whip or ice cream. Enjoy!
