Raspberry Chocolate Truffle Yogurt Parfait
Today we are making a Raspberry Chocolate Truffle Yogurt Parfait! This recipe uses a quick chocolate yogurt layer, then a raspberry layer, repeated twice. Kind of like eating a raspberry truffle, but what you may imagine it to be if it were in a yogurt parfait form!
This recipe is very easy to make as well. Each layer uses yogurt with its specific flavorings – cacao powder or raspberries – with sweetener. Blend up each part, layer them in a cup and you have a healthy twist on a dessert flavor!
Why You’ll Love This Raspberry Chocolate Truffle Yogurt Parfait
Versatile Recipe: This chocolate raspberry yogurt parfait can be an afternoon snack, a healthy dessert or a make-ahead breakfast! Chia pudding and oatmeal recipes are nice and all, but where do yogurt parfaits fall in terms of meal prep breakfasts? I think this raspberry truffle yogurt is a great recipe that deserves its own special place in the refrigerator!
Unique Taste: The flavor of raspberry with chocolate is one that you likely won’t be able to find as a natural flavor in stores. However, fresh berries with chocolate is so good! It’s surprising there aren’t more berry-and-chocolate combination desserts out there – another reason why you need to make this at home!
Substitutions
Yogurt: I used Silk brand of vegan coconut milk yogurt, but you can use any brand you prefer for the half cup yogurt in each layer. Plain, unsweetened vegan yogurt will work best. Non-dairy yogurt can be based on almonds, oats, cashews, coconut and more. Because of the variety in yogurt bases, taste test the yogurt before using. If you enjoy the taste of the plain yogurt, it should be good to use in this recipe.
Cacao Powder: This is the raw, unprocessed version of cocoa powder. Cocoa powder is commonly used in baking brownies and chocolate desserts! Since cacao and cocoa are very similar, they can be used interchangeably in this recipe. To find cacao specifically, you can check online (I use Organic Traditions brand) or check a health food store.
Pure Maple Syrup: Substitute with agave nectar instead. Other liquid sweeteners, such as brown rice syrup, coconut nectar, date syrup or others may be used. Taste test the sweetener first – if you like it plain, you can use it in this recipe. The nice thing is that this is a versatile recipe, so you can always add more sweetener later as desired.
Raspberries: You can use frozen raspberries instead of fresh, if needed. Fresh raspberries are more expensive and not always in season, but you can find a bag of frozen raspberries in the frozen fruits aisle at the grocery store almost any time of the year. Raspberries are also a great source of Vitamin C!
Raspberry Chocolate Truffle Yogurt Parfait Recipe Notes
- Top the parfait with fresh raspberries, mini vegan chocolate chips or other optional toppings. Other fresh fruit may not pair so well with the chocolate-raspberry flavor as a topping, but a small bowl of your favorite fruits on the side for breakfast with this parfait will add more dietary fiber!
- If you prefer tangier yogurt, mix some fresh lemon juice into the raspberry layer.
- For a thicker yogurt, find vegan greek yogurt instead of regular vegan yogurt.
- For a sweeter yogurt, add in more maple syrup after taste testing the blended yogurt. You can also adjust the amount of yogurt to add more after blending the original ingredients.
