Substitutions

Avocado Oil: Use olive oil or grapeseed oil.

Chickpeas: For best results, use canned chickpeas for this recipe. This works great, because they are still slightly undercooked in the can, and work well to hold a firm shape. You can also cook your own, but make sure not to overcook them – they shouldn’t easily squish by touching them (note the texture of canned chickpeas and how home-cooked ones are usually larger in size and softer).

Lemon Juice: Use fresh lemon juice versus a pre-bottled juice, for best results.

Garam Masala: This is a warm, aromatic blend of spices commonly used in Indian recipes. The term “garam” translates to “hot” or “warming,” but it’s not spicy – instead, it gives a deep warmth to dishes. While the exact combination of spices can vary by region and household, garam masala typically includes cumin, coriander, cardamom, cinnamon, and cloves. Do not substitute this – it adds the most flavor! You can find it online, or in Indian grocery stores.

Roasted Chickpeas Recipe Notes

  • For the crispiest texture, make sure your chickpeas are thoroughly dried after washing. Excess moisture can prevent them from roasting properly and leave them soggy. Pat them down with a paper towel and let them air dry for a few minutes before seasoning.
