Substitutions
Yogurt: Choose your preference for vegan yogurt. There are many brands, but taste test the yogurt before using in this recipe. Some can be hit or miss, so it just depends on your preference. You can choose an unsweetened yogurt to keep this recipe refined sugar-free, or opt for a sweetened, or a vanilla flavor of yogurt. I do not recommend berry or other yogurt flavors, because the granola is a cinnamon-chai flavor, and it may not pair well together.
Pears: Choose ripe but firm pears like Bosc or Anjou, as they hold their shape well during roasting. Avoid overly soft pears to prevent them from becoming mushy. You can even try using apples instead of pears in this recipe!
Coconut Sugar: Substitute with brown sugar, but the recipe will not be refined sugar-free in that case.
Maple Syrup: Use pure maple syrup (where the only ingredient on the label is just “maple syrup”). You can substitute with agave nectar, but it will not be refined sugar-free. Alternatively, try coconut syrup or date syrup (I haven’t tried these).
Quick-Cooking Oats: These work the best because the ingredients can mix together and hold the oats into clumps with the oil and maple syrup. If using larger flake oats, pulse them a few times in a spice grinder to break them up before using.
Coconut Oil: This recipe uses refined coconut oil, which is the type that does not smell like coconuts! It has a neutral smell and flavor. Do not use virgin or extra-virgin oil, as it will have a strong coconut smell, and it will change the taste of the recipe.

Roasted Pears with Yogurt & Crisp Granola Crumble
Equipment

- Small Stovetop Pan
- Heatproof bowl

Ingredients
For the Caramelized Pears
- 1 firm, medium pear cut into two halves
- 1 tsp coconut sugar
- ½ tsp refined coconut oil
- 4 tbsp vegan yogurt split into two
For the Granola
- 2 tbsp pure maple syrup
- 2 tbsp refined coconut oil
- ½ cup quick-cooking oats
- ½ tsp vanilla extract
- ⅛ tsp pink salt
- ¼ tsp ground cinnamon
- ⅛ tsp ground nutmeg
- ⅛ tsp ground ginger
- ⅛ tsp ground cloves
Instructions
- Preheat oven to 325 degrees F.
For the Granola
- If the 2 tbsp coconut oil are not melted, place them in a heatproof bowl in the microwave for 20 seconds at a time to melt
- In a medium-sized bowl, add in the melted coconut oil, along with the maple syrup, vanilla and salt. Stir to combine, then stir in the oats.
- Line a baking tray with a sheet of parchment paper. Spread the granola out evenly on it.
- Bake for 15-16 minutes, until the oats are golden brown. Once baked, turn off the oven and remove the granola. Allow it to cool for 20 minutes on a heatproof surface. It will harden as it cools.
- Once it's cooled, set it aside to use in the pears.
For the Pears
- In a small stovetop pan over medium heat, add the coconut oil and coconut sugar.
- Once it is hot, add the pears, each half face down. Allow them to roast in the oil for about 5-7 minutes on each side, flipping over to ensure both sides are roasted.
- Turn off the heat and place each pear in a plate. Top each pear with 2 tbsp of yogurt and half of the granola that was made. Enjoy it fresh!

Storage
- Store the granola in an airtight container at room temperature for up to two weeks.
- Do not store the roasted pears, as those are best made and eaten fresh.
