Ingredients
  

  • ½ cup dry couscous
  • 1 cup vegetable broth
  • ½ tsp sweet smoked paprika
  • ½ tsp paprika
  • ¼ tsp pink salt
  • ¼ medium red apple diced
  • 4 tsp fresh lemon juice

For the Almonds

  • 1 tsp avocado oil
  • 2 medium garlic cloves finely grated
  • 3 tbsp slivered almonds toasted

Instructions
 

  • Bring a small pot with exactly a half cup of vegetable broth to a boil, over high heat on the stove.
  • Once boiling, turn off the heat. Stir in the couscous and fluff it up with a fork, until it absorbs all the water. Then transfer it to a small bowl.
  • In the same pot, heat the avocado oil over medium heat. Once heated, add in the garlic. Stir it for a minute, until golden brown.
  • Add in the slivered almonds. Let them cook for a minute or two per side, until they're toasted. Turn off the heat.
  • In a medium bowl, toss together all the ingredients, including the cooked couscous and toasted almonds with garlic.
  • Top with optional almonds, fresh herbs or a drizzle of more lemon juice. Enjoy as a side dish!
