Ingredients
- ½ cup dry couscous
- 1 cup vegetable broth
- ½ tsp sweet smoked paprika
- ½ tsp paprika
- ¼ tsp pink salt
- ¼ medium red apple diced
- 4 tsp fresh lemon juice
For the Almonds
- 1 tsp avocado oil
- 2 medium garlic cloves finely grated
- 3 tbsp slivered almonds toasted
Instructions
- Bring a small pot with exactly a half cup of vegetable broth to a boil, over high heat on the stove.
- Once boiling, turn off the heat. Stir in the couscous and fluff it up with a fork, until it absorbs all the water. Then transfer it to a small bowl.
- In the same pot, heat the avocado oil over medium heat. Once heated, add in the garlic. Stir it for a minute, until golden brown.
- Add in the slivered almonds. Let them cook for a minute or two per side, until they're toasted. Turn off the heat.
- In a medium bowl, toss together all the ingredients, including the cooked couscous and toasted almonds with garlic.
- Top with optional almonds, fresh herbs or a drizzle of more lemon juice. Enjoy as a side dish!
